Not to be confused with Aqua in the Bellagio, this "open only for dinner" seafood restaurant is a land of familiarity for fresh fish lovers. With seafood flown in daily, a raw bar and a walk- in wine cellar (hidden behind a waterfall) that features such Napa faves as Plumpjack and Stony Hill, chef Tom Moloney, who worked with Wolfgang Puck in Malibu (yes his Postrio is in direct competition in the same hotel), has a full- house on his hands. Vegas pun intended of course. We liked the seafood plateau best.
